Niman Ranch Veal is fed 30 days on mother's milk, then on grass and formula made from milk protein and whey left over from making cheese, producing the best meat. Niman developed the project with Tera Johnson, chief executive officer of White Clover Dairy, a Wisconsin cheese and feed operation. She secured a small state grant to figure out how to raise grass-eating veal calves that would taste good enough to interest high-end chefs.
